Easy Spanakopita Recipe
Preheat your oven to 375°F (190°C).
Thaw 1 pound of frozen spinach and squeeze out excess moisture.
In a bowl, combine the spinach with 1 cup of crumbled feta cheese, ½ cup of ricotta cheese, 2 beaten eggs, and a pinch of nutmeg.
Melt 2 tablespoons of butter in a skillet and sauté 1 chopped onion until translucent.
Add the cooked onion to the spinach mixture and stir to combine.
Brush melted butter onto a sheet of phyllo dough, then layer another sheet on top. Repeat until you have 6 layers.

Fold the edges of the phyllo over the filling and roll into a log shape.
Place seam-side down on a baking sheet, brush with more butter, and bake for 25-30 minutes until golden brown. Slice and serve warm.
