Hearty and Flavorful Pasta e Fagioli
In a large pot, heat 2 tablespoons of olive oil over medium heat.
Add 1 diced onion, 2 minced garlic cloves, and 2 diced carrots, cooking until softened.
Stir in 2 cans of diced tomatoes, 4 cups of chicken or vegetable broth, and 2 cans of drained and rinsed cannellini beans.
Season with 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, and salt and pepper to taste.
Bring the mixture to a simmer, then add 1 cup of small pasta such as ditalini.
Cook until the pasta is al dente and the flavors are well combined.
Serve hot, garnished with freshly grated Parmesan cheese and chopped parsley.
