How to make Sushi Rice
Rinse short-grain sushi rice in cold water until the water runs clear
Combine rice and water in a rice cooker or pot using a 1:1 ratio
Let the rice soak in the water for 30 minutes before cooking.
Cook the rice according to the rice cooker's instructions or bring to a boil, then reduce heat to low and simmer for 18-20 minutes
Once cooked, let the rice sit covered for 10 minutes to steam
In a small saucepan, mix rice vinegar, sugar, and salt over low heat until dissolved
Gently fold the vinegar mixture into the cooked rice, using a slicing motion to avoid smashing the grains
Fan the rice while mixing to cool it down and achieve the perfect sushi rice texture
