Red Beans and Rice Recipe for a Hearty Meal

Rinse and soak 1 pound of dried red beans overnight in water.

In a large pot, sauté diced onions, bell peppers, and celery until softened.

Add 4 cloves of minced garlic and cook for another minute.

Drain the soaked beans and add them to the pot with 6 cups of chicken or vegetable broth.

Season with bay leaves, thyme, cayenne pepper, salt, and black pepper.

Simmer the mixture for 1.5 to 2 hours, stirring occasionally, until beans are tender.

Mash some of the beans to thicken the mixture, then serve over cooked rice.

 Garnish with chopped green onions and enjoy this flavorful red beans and rice dish!
