Taco Soup: Hearty and Customizable
Heat oil in a large pot or Dutch oven over medium heat.
Add chopped onion and cook until softened and translucent, about 5 minutes.
(Optional) Brown ground meat or cook lentils according to package instructions and set aside.
Stir in diced tomatoes (with their juices!), rinsed and drained canned beans, and drained corn.
Pour in your preferred broth, either chicken or vegetable.
Add your favorite taco seasoning and stir to combine all the ingredients.
Bring the soup to a simmer, then reduce heat and let it simmer for 20 minutes.
Taste the soup and adjust seasonings with salt, pepper, or additional taco seasoning to your preference.
