Zucchini Bread Recipe

Preheat your oven to 350°F (175°C) and grease a loaf pan.

 Grate 2 cups of zucchini and squeeze out excess moisture using a clean towel.

 In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon.

 In another bowl, beat 2 eggs, 1/2 cup of vegetable oil, 1 cup of sugar, and 1 teaspoon of vanilla extract until well combined.

 Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

 Fold in the grated zucchini and 1/2 cup of chopped nuts or chocolate chips if desired.

 Pour the batter into the greased loaf pan and smooth the top.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Enjoy!
