  • Homemade Focaccia with Roasted Eggplant and Red Pepper Spread
  • Paired with: Demarie “Luigi” Pét-Nat, Roero, Piedmont — This “Pét-Nat” (Pétillant Naturelle – an ancient method of fermenting wine in the bottle) combines the bready notes of a hazy beer with orange, citrus and a hint of white floral notes

Main Tasting

  • Prosciutto, Melon and Basil Skewers with Balsamic Glaze
  • Paired with: Demarie Arneis, Roero, Piedmont — Bright, dry 100% Arneis with notes of white flowers, apricots, chamomile, and a touch of green herbs and hint of almond
  • Scungilli (Conch) in Red Wine Marinara Sauce with Toasted Polenta
  • Paired with: Caparzo Rosso di Montalcino ‘18, Tuscany, Italy — 100% Sangiovese tasting of ripe red berries (raspberry, cranberry, cherry and currants) combined with pomegranate, herbs and a touch of baking spices
  • Gnocchi with Creamy Gorgonzola Sauce, Toasted Walnuts and Pancetta
  • Paired with: Luigi Righetti Amarone, Valpolicella Classico, Veneto — Long and lingering, rich flavours of dark, dried fruit, black cherry, sweet spices, combine with roasted nuts and a hint of anise
